1. Fruit and cauliflower smoothie

Blitz together an easy veggie dip that’s perfect for a Mediterranean-style mezze platter, after-school dipping, or as a veggie-forward addition to a game-day snack spread! To make, blend 3 cups of thawed, cooked cauliflower with 2 tbsp of tahini, a drizzle of extra-virgin olive oil and a large pinch of salt and—voilà—vegetarian hummus is served. Tip: Drizzle generously with olive oil and garnish with toasted sesame or sunflower seeds for a crunchy addition before serving.
