1. Stuffing Egg Cups

Use your extra stuffing to make egg cups! Combine stuffing and leftover turkey and toss with chicken stock or gravy. Press into a small bowl and crack an egg on top. Bake in 325°F oven until eggs are set, approx. 25 min. Sprinkle with salt and pepper.

2. Stuffing & Turkey Pie

Toss stuffing, turkey, gravy and cranberry sauce. Place in the centre of thawed frozen pie dough or puff pastry. Brush edge with whisked egg and fold over, crimping the edge with a fork. Brush crust with egg and bake at 375°F on a parchment paper lined baking sheet until golden, approx. 20 minutes.

Tip: Alternative use chicken instead of turkey

3. Mashed Potato Cakes

Make golden potato cakes for breakfast or lunch. Stir in shredded cheddar and any leftover protein like ham or turkey, and chopped green onion. Press into a thick patty and cook on a generously oiled skillet until browned and crispy. Serve with sour cream or fried egg.

Tip: Stir leftover mashed potatoes into a soup for a creamy potato soup (like a loaded potato soup topped with bacon bits, cheese and green onion).
